It’s HUMP DAY!!!
I just love Wednesdays. I used to love them mostly because they were one of my normal days off from work; a day I could count on to get stuff done and make a yummy breakfast for Mr. Crumby before he went to his normal mid-week closing shift. Things have changed, sadly, as I was recently promoted from assistant manager to department manager! After six years of assistant-ing, they shipped me away from my favorite store to my new bakery home, and now, regularly scheduled days off seem like ethereal wisps on the calendar, taunting me about days of yore.
My new status has made me appreciate the days off I do get (that I now get to assign for myself!), and it hasn’t stopped me from getting up early and whipping up a delicious morning meal. Our breakfasts usually consist of pancakes, bacon and lots of scrambled eggs, omelets, or the random hazelnut crepes.
Sometimes, though, especially when English muffins are on sale, some kind of Eggs Benedict comes out of the kitchen. Today, I bring you my Tomato & Eggs Florentine, since I was sadly out of breakfast meat – had to go with the veggie type!
Yep, freshly poached eggs and homemade hollandaise for the win! I was ignorant to the beauty of this dish until about a year ago, when a good friend had me over for some, and now I can’t get enough!!
