And, of those that do, how many would refer to them as “your kids?”
Mr. Crumby and I don’t have children, yet, but we do have our Mini Aussie, and he is the joy of our lives.
I’ve had dogs before, but I have never felt the same kind of adoration for them as I do for our Vader.
Which brings me to my point.
My posts are behind this week, because (1) I haven’t set up scheduled posts yet, (2) we’re on vacation, and (3) we had Vader neutered the other day, and I’ve wanted to do nothing but cuddle him, dote on him and take his pain away.
I baby him too much as it is. Pretty sure this just made it worse.
But! In spite of my puppy-coddling, I still had to make deliciousness for you, so I present this Bananas Foster Coffee Cake!
For all you banana lovers out there, today is your day!
Yes indeed, August 27th is National Banana Lover’s Day, even though I can honestly say I celebrate bananas on a daily basis.
I have one for breakfast on the way to work, toss them in my smoothies, have one before my gym workout for a quick energy boost.
Sometimes, I buy way too many, though. I actually prefer my bananas fresh-from-the-store yellow, so when they aren’t up to par, they end up rotting on the counter.
And I don’t mean simply spotty. I mean black. I mean shrivel-y and a soon to be beacon for fruit flies.
The beautiful thing about nasty, unrecognizable bananas you would never think about eating by themselves, is that they are absolutely perfect for baking!
I never really make coffee cake. I’m more of a French toast or muffin kind of gal. But I decided to give it a go as a change of pace.
Great idea!
Instead of using my blacker than black bananas in bread like I usually do, I thought about using them in my favorite banana dessert.
Wayyyy too far gone. They would not have worked in Bananas Foster. BUT.
If I could bring that flavor to the breakfast table…
It’s just as good as it looks, folks.
The nutty, brown butter coffee cake base. The faint taste of rum. Caramelized banana flavor in every bite.
And butter. Goodness, there is so much butter.
It’s like I took your Bananas Foster and dumped it all over a slab of cake.
This is definitely not something you’d want to have for breakfast every day.
Pfft. Who am I kidding. Yes you would.
Can’t say I blame you.

Caramel Banana Coffee Cake
Ingredients
Rummy Brown Butter**
- 1 ¼ cup unsalted butter
- 2 tablespoons rum
- 1 teaspoon vanilla extract
- 1 tablespoon + 1 teaspoon ground cinnamon
Banana Cake
- ½ cup Rummy Brown Butter**
- ½ cup light brown sugar packed
- 2 eggs beaten
- 3 bananas over ripened
- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¼ milk
- ½ cup chopped nuts optional
Banana Filling
- ¾ cup Rummy Brown Butter**
- 1 cup light brown sugar packed
- Ground cinnamon if desired
- 1 banana ripe and thinly sliced
Rum Glaze [this will make more than you need!]
- 1 cup brown sugar packed
- ½ cup unsalted butter
- ¼ cup evaporated milk
- 1 cup powdered sugar
- 1 tablespoon rum
Instructions
Rummy Brown Butter**
- Over medium heat, melt butter, stirring constantly. As the butter boils and bubbles, continue stirring and watch for it to turn a light brown shade. Be sure not to wait too long to remove it from the heat, as it’s very easy to burn butter this way.
- Remove the pan from the heat. Whisk in the rum, vanilla extract, and cinnamon.
- Transfer brown butter in a small bowl, and set the bowl in the refrigerator for about 10 minutes to stiffen up for use in this recipe.
Banana Cake
- Preheat oven to 350 degrees F. Grease two 9 inch cake pans and set aside.
- In a stand mixer fitted with a paddle attachment, cream ½ cup Rummy Brown Butter with sugars for 3 minutes, until fluffy; add beaten eggs and mix until combined. Add bananas and beat until combined.
- In a separate bowl, combine flour, baking powder, baking soda & salt; add to wet ingredients slowly, mixing until incorporated.
- Add milk and nuts and mix until well blended. Divide batter into prepared pans.
Banana Filling
- Cream remaining chilled Rummy Brown Butter with brown sugar until fully combined, adding more cinnamon if desired. Fold banana slices into brown sugar mixture.
- Drop spoonfuls onto cake batter, swirling with a knife to your heart’s content!
- Bake cakes for 25-35 minutes, until a toothpick inserted in the center comes out clean – make sure you don’t poke a chunk of cinnamon swirl by mistake!
- Remove from oven and cool for 10 minutes, before moving cakes from pans to plates.
Rum Glaze [this will make more than you need!]
- In a medium saucepan, bring brown sugar, butter, and evaporated milk to a boil over medium heat, whisking constantly for 1 minute.
- Remove pan from heat, and gradually whisk in powdered sugar until smooth.
- Let cool for about 5 minutes; add rum, and whisk until thickened before drizzling on cooled cake.
Nutrition
Throw a scoop of ice cream on there and call it a day.

I’m finding this recipe so late in the game, but this looks so amazing! All of the components sound packed with flavor and I can’t wait to make it! I made a Bananas Foster Cream Tart recently and wanted to keep going with the theme. In your instructions for the cake portion, you mention blending the rummy browned butter with “sugars”, plural. Is there meant to be a measure of granulated sugar along with the brown sugar for just the cake portion?
