Bacon, Cheese & Asparagus Frittata

A delicious variation of an Italian breakfast staple, this frittata is stuffed with your favorite cheese, healthy asparagus, and that wonderful thing we call bacon!

Serves 1 - 12" skillet     adjust servings

Preparation 5 mins Cook Time 13 mins Total Time 18 mins


  • 2 tablespoons olive oil
  • 1/2 cup (about 6 stalks) asparagus, chopped into 1-inch pieces
  • 1/4 cup bacon (cooked and roughly chopped)
  • 1/4 cup cheese (I used feta)
  • 8 eggs


  1. Preheat your oven's broiler.
  2. Heat oil in the skillet(s) at medium heat. Cook asparagus for 5-7 minutes or until tender.
  3. Add in the bacon and stir.
  4. Whisk the eggs and pour them slowly into the skillet(s). Do not stir! Sprinkle with cheese and cook for 2-3 minutes or until sides begin to set.
  5. Transfer to the oven and broil for 2-3 minutes or until just set and slightly golden.
