As you read this, Mr. Crumby and I have set off on our belated honeymoon to Europe, and to keep you company while we’re away, I’ve asked five of my closest blogging friends to guest post, and to share with you their favorite European-themed recipes. Today, we are saying our final goodbyes to Rome, Europe, and our beyond amazing trip of a lifetime! It will likely be the longest day of my life – we board our plane at 9:45am, have a layover in Germany, and arrive home in the late evening: and I’m told I should try to stay awake through all of it, so I can sleep normally when my head hits my own pillow! I have always heard that the best way to stay energized through your day is by starting it with a hearty, protein-filled breakfast. Hello, Crumby Cupcake readers! I’m Jenna from A Savory Feast, and I’m excited to be sharing a recipe with you while Erica is traveling in Europe. Breakfast is my favorite meal of the day, and I’m sharing one my latest creations with you today… my Bacon, Cheese & Asparagus Frittata.
When Erica asked me to share a Europe-themed recipe, I wasn’t sure where to begin. I am not really familiar with authentic European recipes, so I knew I needed to research some ideas.
I recently invested in some 6-inch cast iron skillets because of how much I love Chili’s Skillet Brownies. But, because I’ve been trying to eat better, I needed to find some healthy ways to use my new skillets.
I decided to try making some frittatas, and found out that they are an Italian dish! Perfect for sharing with you during Erica’s visit to Italy.
When I started cooking this frittata, I anticipated it would take a long time and be an involved recipe. But it turned out to be so quick and easy to make!
There is a little bit of prep time, but once you get going, your breakfast will be done before you know it.
Once you get this recipe down, there are so many ways you could mix it up. Try different vegetables, cheese or other add-ins.

Bacon, Cheese & Asparagus Frittata
Ingredients
- 2 tablespoons olive oil
- ½ cup asparagus about 6 stalks; chopped into 1-inch pieces
- ¼ cup bacon cooked and roughly chopped
- ¼ cup cheese I used feta
- 8 eggs
Instructions
- Preheat your oven's broiler to high.
- Heat oil in a 12-inch non-stick skillet set at medium heat. Cook asparagus for 5-7 minutes or until tender.
- Add in the bacon and stir.
- Whisk the eggs and pour them slowly into the skillet(s). Do not stir! Sprinkle with cheese and cook for 2-3 minutes or until sides begin to set.
- Transfer to the oven and broil for 2-3 minutes or until just set and slightly golden.
