I was so lucky to have my first cookbook photographed by my über-talented friend and mentor, Helene Dujardin. The shots are simple, but absolutely stunning and I could not have asked for a better team and stylist than Tami Hardeman (who, among other things, also styles those gorgeous banners you see hanging in your Publix!)
I can only hope to someday be doing what they do as my main hustle….including shooting my next cookbook myself!
But in the meantime, I’ll keep on doing what I do here, because making you guys happy makes me happy!
So, what’s in The Electric Pressure Cooker Cookbook For Two?
If you’re a fan of seafood, this San Francisco staple, Cioppino, will be right up your alley. If not, there are fourteen more seafood dishes like Gumbo, California Fish Tacos, and a 15-minute Shrimp Boil that will knock your socks off.
Did you know you can make desserts in your electric pressure cooker? I made FIFTEEN for the book, including Key Lime Pie, Stout-Poached Pears, Flourless Chocolate Espresso Cake, and these Mini White Chocolate & Cherry Bundt Cakes.
If you’re in the mood for a hearty main, there are FIFTY chicken, turkey, pork, beef, and vegetarian/vegan dinners to be found in the book. And let’s not forget about the breakfasts, sides, soups, sauces, and pantry staples!
This Tonkotsu Ramen is easily made with the Bone Broth recipe you’ll also find in the book.
But my personal favorite dish – one that I’ve made multiple times in the last year – has to be the Shrimp & Grits. My husband requests it at least once a month, and we’ve gotten a few of our family members hooked on it, as well!
Creamy grits, crispy fried eggs, juicy shrimp and bacon. GAH. I’m so hungry right now.

The recipes I see made the most are the Pork & Sauerkraut and the 30-Minute Spaghetti & Meatballs! They’re both quick and easy and oh-so comforting, so it’s no wonder you love them so much!
And the Tomato Basil Bisque is a close runner-up! It’s one of my cold weather faves…truly nothing like it when you pair it with a gooey grilled cheese!

I need this, I have an Instant Pot and I have never used it!! I really need a cookbook to get me started with it, I love my old pressure cooker, but it is not digital nor can it do all that an Insntant Pot can do. I don’t know why I haven’t used it yet other than the fact I don’t have any good recipes to try out in it with instructions on how to do it. Keeping my fingers crossed.
