Ingredients

  • 2 cups watermelon chopped
  • 2 cups cantaloupe chopped
  • 2 peaches large, chopped
  • 1 1/2 cups strawberries fresh, hulled & quartered
  • 1 cup blueberries fresh

Citrus Poppy Seed Yogurt

  • 1 5.3 oz. container Oikos Key Lime Greek yogurt
  • 1 5.3 oz. container Oikos Orange Cream Greek yogurt
  • 2 teaspoons lemon juice
  • 1/2 teaspoon orange zest
  • 1/2 teaspoon lime zest
  • 1 teaspoon poppy seeds
  • Fresh mint for garnish (optional)

Instructions

  • Layer fruit into 4 parfait glasses or stemless wine glasses in the order listed. Sprinkled with freshly chopped mint if desired.

Citrus Poppy Seed Yogurt

  • Mix all dressing ingredients together in a small bowl. Taste and add more zest or juice as desired. Spoon on top of individual salads and garnish with sprigs of mint. Serve and enjoy.
