Cannoli doesn't have to be intimidating!

Making cannoli shell dough isn't any harder than making pie dough - and with the right tools, forming those little tubes of happiness is a cinch!

All-purpose flour Granulated sugar Ground cinnamon Kosher salt Unsalted butter Eggs Marsala wine Cooking oil

WHAT you'll need

CANNOLI SHELLS

Pulse dry ingredients in food processor, then add egg and Marsala wine.

Knead into a dough, then chill for ~1 hour.

Roll out the dough and cut out 12 4-inch circles. Stretch them out about an inch and wrap them loosely around cannoli molds, sealing them with a little egg white.

Fry them in hot cooking oil for 2-3 minutes until they're golden, crispy, and fried through.

Let them cool, remove them from the molds, and dip them in melted chocolate.

Drained ricotta cheese Powdered sugar Orange zest Mini chocolate chips Sliced toasted almonds Chopped pistachios Candied fruit ...or any garnish your heart desires

WHAT you'll need

CANNOLI cream

For optimal results, DRAIN THE RICOTTA THE DAY BEFORE.

Fold together the drained ricotta and powdered sugar together in a bowl.

Fold in orange zest and mini chocolate chips until the filling is well combined. 

Transfer the filling to a pastry bag and squeeze it into the cooled cannoli shells.

QUICK TIPS

DON'T LIKE WINE? Use white grape juice, apple cider vinegar, or anisette in place of it!

NO FOOD PROCESSOR? A pastry cutter or two forks will get that dough worked out just as easily!

PREFER MASCARPONE? You can substitute it for the ricotta at a 1:1 ratio.
