Crock Pot Mexican Beer Chili

A super simple Mexican-style crock pot chili, simmered all day with a bottle of your favorite beer!

Preparation 25 mins Cook Time 6 hours Total Time 6 hrs 25 mins

  • 1 Tablespoon olive oil
  • 1/2 large onion, chopped
  • 3 Tablespoons garlic, minced
  • 1 1/4 lbs. ground beef
  • 3/4 lb. ground pork
  • 2 cans tomato sauce
  • 1 bottle beer (I recommend Corona, Sol, Presidente, or Dos Equis)
  • 1 can diced tomatoes
  • 1 can diced tomatoes & chiles
  • 1 can red kidney beans
  • 1 can black beans
  • 1 can sweet kernel corn
  • 5 Tablespoons chili powder
  • 2 teaspoons cumin
  • 1 Tablespoon red pepper flakes
  • 2 teaspoons cocoa powder
  • Salt & pepper, to taste

  1. Heat olive oil in a large saucepan over medium heat. Cook onions 4-5 minutes, stirring occasionally. Add garlic and cook together until fragrant, 1-2 minutes.
  2. Place onions and garlic in crock and return pan to heat. Add ground beef and pork to pan and cook thoroughly, until no pink remains. Drain all but 2 tablespoons of grease, and place meat and remaining grease in crock.
  3. Add tomato sauce, beer, diced tomatoes, beans, corn, cocoa powder, and spices to crock and stir until everything is well distributed.
  4. Cook on low heat for 5-6 hours.

Recipe Notes

I find I often add more chili powder, because I am a sucker for it. Feel free to sprinkle in some more if the chili doesn't quite meet your flavor expectations!
