Chai-Spiced Apple Crumble Blondies

<span></span>Blondies, fall style! Chai-Spiced Apple Crumble Blondies combine the flavors of the season with the brownie's brown sugared-little sister.

Serves 9 servings     adjust servings

  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 1/4 cups all-purpose flour
  • 2 teaspoons chai spice
  • 1 teaspoon baking powder
  • Pinch kosher salt

Apple filling

  • 3 large apples, peeled, cored, and sliced thinly
  • 3 Tablespoons granulated sugar
  • 2 Tablespoons all-purpose flour
  • 1 teaspoon cinnamon
  • 1 teaspoon lemon juice
  • Pinch nutmeg

Crumble topping

  • 1/2 cup old-fashioned oats
  • 1/4 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon chai spice
  • 1/4 cup unsalted butter, cold and cubed


  1. Preheat oven to 350 degrees F. Butter an 8x8 cake pan and set aside.
  2. In a stand mixer or with a hand mixer, cream together butter and sugars on high speed for 2 minutes until fluffy. Add egg and vanilla and mix until blended. Sift in dry ingredients, mixing until just incorporated.
  3. Pour batter into prepared pan and spread evenly. Set aside.

Apple filling

  1. Combine all ingredients in a large bowl and toss to coat. Allow to sit for 10 minutes, then arrange evenly on top of batter.

Crumble topping

  1. Stir together oats, sugar, flour, and spice in a small bowl. Cut in butter and massage in until mixture is crumbly. Spread evenly over the top of the apples.
  2. Bake for 30-40 minutes in preheated oven until blondies are golden and a toothpick inserted in the center comes out cleanly with no batter.
  3. Cool 5-10 minutes before serving, then enjoy with a drizzle of caramel or a scoop of ice cream.
