Man, we’re really killin’ it with the frozen treats this summer. Talk about sticking with the season.
Does that mean this fall will be full of apples and pumpkins and comforting dinners, oh my?
So, our air conditioner took a dive a couple weeks ago. (Because it allllways happens in the dead of summer.)
If you know me, you know what a severe tragedy that is, but it’s even worse for The Hubs. His hot Dominican blood forces me to endure 70-degrees indoors at all times…sometimes even in the cooler months. His reasoning (which makes perfectly logical sense?) I can always pile on more blankets when I get cold, but there’s only so much he can take off.
I should really stop taking that amazing first-world machine for granted. With temps outside getting into the upper 90’s that week, the inside of the house was definitely uncomfortable. We happen to still have a window unit from a few years back, and even with that cooling our bedroom and a box fan pushing the air into the living area, the stuffy, humid air was inescapable.
I was constantly in the fridge and freezer, looking for ways to cool off after spending hours in front of my computer editing and writing.
(Computers throw off a ton of heat, guys, just FYI.)
When water got to be too bland (which didn’t take long,) I was so grateful to have 2 ingredients that, when combined, create the most refreshing drink on earth: the Arnold Palmer.
I had previously picked up a bottle of Simply Lemonade® and some Gold Peak® Sweet Tea from Walmart and, while pouring them in a glass tasted great – it wasn’t enough. It just wasn’t doing the job.
Out came the ol’ popsicle mold. (Actually, it was a new one.)
A few hours later, this Arnold Palmer Ice Pop was in my hand, and I was as happy as a kid at the front of an ice cream truck line.
2 simple ingredients was all it took to make my grumpy, sweaty ass happy again. That first bite into the lemonade layer immediately made me think of a big bowl of Italian ice. How freezing lemonade changes its flavor is beyond me, but it does. Somehow, it becomes tangier and slightly more satisfying that when it’s in liquid state. On the other hand, the sweet tea loses a bit of the sugary flavor, which wasn’t a problem for me.
I’m one of those weirdos that drinks hers half & half, so.
Of course, after finishing my third popsicle of the morning, the A/C tech showed up, replaced the broken blower motor, and all was well. Perfect timing. We had a couple of friends and their two kids due over that night for dinner, and the house was perfectly comfortable by the time they showed up.
The Hubs and I have been trying to get back to a more active social life. To say we’ve retreated into our own little world in the last couple of years would be an understatement.
With my recent change in career, and my general outlook on life (living in the now vs. planning for a future that’s uncertain,) I’ve come to realize that time with the people we’re close with is as precious as anything. All of our friends lead very busy lives, but summer is the one time of the year we can really get together and truly relax before the bustle of the other 9 months takes us away.
Abe and I may not have kids of our own, but we look at summer as a sort of vacation from school for ourselves, too.
Arnold Palmer Ice Pops
- 2 cups lemonade
- 2 cups tea sweetened or unsweetened
- In a 10-pop popsicle maker, fill each mold halfway with lemonade. Cover and freeze for 1 hour. Remove from freezer and fill the rest of the way with tea. Replace cover and insert popsicle sticks. Freeze for at least 2 hours before serving.
